Few desserts capture summer’s simple pleasures like strawberry shortcake. Juicy berries, tender homemade biscuits, and billowy whipped cream create a nostalgic, indulgent classic.
Here, lightly sweetened shortcakes are baked until golden, then layered with strawberries macerated in sugar, vanilla, and lemon. As the berries rest, they release a luscious syrup that soaks into the warm biscuits—the heavenly combination that gives this dessert its name.
INGREDIENTS
For the Shortcakes
• 2 cups all-purpose flour
• ¼ cup granulated sugar
• 1 tablespoon baking powder
• ½ teaspoon salt
• ½ cup cold unsalted butter, cubed
• ¾ cup heavy cream
• 1 teaspoon vanilla extract
• 1 tablespoon coarse sugar, for topping
For the Strawberries
• 4 cups fresh strawberries, hulled and sliced
• ¼ cup granulated sugar
• 1 teaspoon vanilla extract
• 1 teaspoon fresh lemon juice
For the Whipped Cream
• 1½ cups cold heavy whipping cream
• 3 tablespoons powdered sugar
• 1 teaspoon vanilla extract
DIRECTIONS
1. Prepare the Strawberries
Combine the strawberries, sugar, vanilla, and lemon juice in a bowl. Toss gently and let stand for 20–30 minutes, until juicy and fragrant.
2. Make the Shortcakes
Preheat the oven to 425°F. In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Add the cream and vanilla, stirring just until the dough comes together. Do not overmix.
Turn the dough onto a lightly floured surface and gently pat it to Âľ-inch thickness. Cut into six rounds and place on a parchment-lined baking sheet. Sprinkle with coarse sugar.
Bake for 12–15 minutes, until golden brown. Cool slightly.
3. Whip the Cream
Beat the heavy cream, powdered sugar, and vanilla until soft, billowy peaks form. Do not overbeat.
4. Assemble the Shortcakes
Split each warm shortcake in half. Spoon the strawberries and their juices over the bottom halves. Add whipped cream, followed by more strawberries. Top with the remaining shortcake halves and finish with another spoonful of whipped cream and a whole strawberry.
