There are pumpkin cheesecakes—and then there is this one. Rich, silky pumpkin cheesecake gets a Southwest-inspired twist with a Mexican hot chocolate crust, a whisper of cayenne, and ribbons of buttery caramel. Finished with billowy whipped cream and a generous caramel drizzle, this is a dessert designed to make an entrance.
MEXICAN HOT CHOCOLATE CRUST
Ingredients
• 2 cups chocolate wafer cookie crumbs
• 5 tablespoons unsalted butter, melted
• 2 tablespoons granulated sugar
• 1 teaspoon ground cinnamon
• ¼ teaspoon cayenne pepper
• ¼ teaspoon salt
Directions
Preheat oven to 350°F. Combine cookie crumbs, melted butter, sugar, cinnamon, cayenne and salt. Press firmly into the bottom of a 9-inch springform pan and slightly up the sides. Bake for 8–10 minutes. Remove and cool completely.
PUMPKIN CARAMEL CHEESECAKE
Ingredients
• 3 (8-ounce) packages cream cheese, softened
• 1 cup granulated sugar
• 1 cup pure pumpkin purée
• 3 large eggs
• 1 teaspoon vanilla extract
• 1 teaspoon ground cinnamon
• ½ teaspoon ground ginger
• ¼ teaspoon ground nutmeg
• ¼ teaspoon salt
• ⅛ teaspoon cayenne pepper
• ½ cup caramel sauce, plus extra for drizzling
Directions
Reduce oven temperature to 325°F. Beat the softened cream cheese and sugar until smooth and creamy. Add the pumpkin, then beat in the eggs one at a time. Mix in vanilla, cinnamon, ginger, nutmeg, salt and cayenne just until combined.
Pour half of the cheesecake batter over the cooled crust. Drizzle with several tablespoons of caramel sauce. Add the remaining batter and gently smooth the top.
Bake for approximately 55–70 minutes, or until the edges are set and the center still has a slight jiggle. Turn off the oven, crack the door open and allow the cheesecake to cool inside for about 1 hour. Remove and cool completely before refrigerating for at least 6 hours, preferably overnight.
CARAMEL WHIPPED CREAM FINISH
Ingredients
• 1 cup heavy whipping cream, chilled
• 2 tablespoons powdered sugar
• 1 teaspoon vanilla extract
• 2 tablespoons caramel sauce, chilled
Directions
Whip the cream, powdered sugar and vanilla until soft, billowy peaks form. Gently fold in the caramel sauce. Spread or pipe the whipped cream around the chilled cheesecake and drizzle generously with additional caramel sauce.

The cayenne should whisper, not shout. Its purpose is to awaken the chocolate, pumpkin and caramel—not make the cheesecake spicy. For an especially luxurious presentation, warm the caramel slightly before drizzling so it falls in beautiful ribbons over each slice.
SERVING SUGGESTION
Serve each slice with an extra swirl of caramel whipped cream and a pool of warm caramel sauce. Finish with a light sprinkle of cinnamon and finely grated Mexican chocolate for a signature Southwestern touch.
